When we think about Fall, we think about pumpkins, flavorful spices and comfort foods. We all love our pumpkin spice lattes, warm breads, and sitting by the fire. Fall is s time to eat warm, hearty foods that make us feel good inside and out! One of the foods we especially enjoy this time of year are Quinoa Bowls.
Quinoa is one our favorite super foods this time of year . It is higher in many nutrients than most grains (although it is considered a cereal type seed). It is gluten-free and packs a powerful punch. It is a great source of fiber that keeps you feeling full and improves overall gut health. It’s labeled as a COMPLETE PROTEIN~ meaning it consists of all the essential proteins needed for overall good health.
How can you get this superfood in your diet? What about Quinoa Bowls! In our recipe, you’ll find that we don’t just eat Quinoa by itself, we add other healthy ingredients like spinach and avocado which offer endless nutritional value. We also add in freshly grated garlic for a robust flavor and another overall health boost.
And guess what else? Quinoa Bowls are so easy to take on the go because they can be eaten warm or cold! Make one for dinner and then pack away the extras for a nice lunch!
Easy Recipe for Quinoa Bowls
- 1 cup dry quinoa (cook following directions on the box)
- 2 medium avocados diced
- 3 oz baby spinach chopped
- 8oz cherry tomatoes halved
- 3 green onions sliced
- 1 to 2 cloves of minced garlic
- 2 TB red wine vinegar
- 1/8 tsp salt
Toss quinoa and spinach first in a bowl with the garlic, then add the onions, tomatoes, red wine vinegar and salt. Add the avocado and lightly toss! Enjoy ….
